10th Ward Temple Assignment
Bro. LeMaster's Funeral
Yummy Bean Salad/Salsa
Canned black-eyed peas, rinsed (again, four)
Shoepeg or white corn. (I used white, because honestly I have no idea what
shoepeg is and I'd bothered Judy several times with texts from the grocery
store. One bag, just a regular small bag of frozen corn.)
Red onion. (I diced a whole one. Could have diced a bit more.)
Cilantro. (I chopped the leaves from a bunch, maybe a cup.)
Italian salad dressing. Judy says any work but she usually uses Kraft's
basic Light version. (I poured an entire bottle into the bowl).
Tomatoes or (as Emilee suggested to me earlier today) avocado would make
good additions.
Great with chips, good as a salad on its own, good over greens, and better
the next day than it is the day you make it.
